Steps to Purchasing Bulk (Check our booking page to make sure dates line up for you.)
1. Fill out a Custom Cuts Sheet and submit it through the website. (Website will redirect you to the ‘add to cart’ page to move forward.)
2. Select Which Beef Package you would like to order.
***If Buying Beef AND Pork, please repeat steps 1 and 2 for the next meat package you intend to purchase. If buying retail with this order too, please go to the shop and add remaining items before checking out.
3. Go to your cart after finishing up and check out.
4. After checkout, the website will direct you to book your pickup/delivery. Please make sure to pick the correct booking Calander for your specific order.
*IF PAYING VIA EBT, you will HAVE to call in your order at 865-441-6844, or message our FB page direct.
****If booking Delivery, don’t worry about the time, you are simply booking the day. For pick-ups, you are choosing your shop pick up time.

We offer a few ways to purchase Bulk Beef here: “General Beef”, “Single Carcass Beef”, and “Bryant’s Raised Beef”.
General Bulk: This may be beef ordered in, trusted beef that are harvested at our facility, or Bryant’s own raised beef. This purchase is our pick based on our labor board and feed lot standings. Convenience to us is solely what makes this bulk package the cheapest.
Single Carcass Beef: This will consist of one total Beef for the entire order, guaranteed. It will have up to a 4–6-week turnaround time on average. We do require the full payment upfront and for the entire cow to be sold prior to harvesting. These are booking for March- December 2026 and all of 2027 now. Today’s price is $7,000 per head!
Bryant’s Raised Beef: This is the ONLY guarantee in the shop to buy Beef that has specifically been farmed, raised, fed out and finished by Bryant himself. There’s remaining availability in April/May, and December for 2026, and May/June, and December for 2027. Today these are selling for $9,000 per head.
***Regular bulk may be built from more than one total beef to maximize cuts on the cattle in our shop against other incoming cut sheets, and to accommodate when we see a bruised loin or any defects, so we don’t have to compromise any yields. Regular bulk may very well be a harvested animal within our operation, it could even be birthed from one of Bryant’s cows. It’s more convenient for our shop, which is why we sell it at a more attractive price.

CUT SHEET TIP: When filling out your Cut sheets, it is our recommendation to choose as many of the cut options available within the cut sheet as possible. Ground beef is going to be in your order with bulk beef, question is, how much?
Ground beef is made from trim off of every single loin. When fabricating the primals of a carcass down to the cuts you are familiar with seeing, trim is unavoidable.
